Bruschetta Al Pomodoro

🕒 Prep time: 10 minutes Cooking time: 30 minutes 🍽️ Servings: 2 to 4

Ingredients

  • 4 medium tomatoes, roughly chopped
  • ⅓ cup extra- virgin olive oil
  • ¼ cup fresh basil leaves, torn by hand
  • Seal salt and freshly ground black pepper
  • 4 slices sourdough bread
  • 1 garlic clove, peeled but whole

Instructions

  • Place the tomatoes in a medium bowl and drizzle with olive oil.
  • Add the basil, a generous pinch of salt, and a scrunch of black pepper.Let this get some beauty sleep and rest in the fridge for about 20 minutes.
  • While the tomatoes marinate, preheat the oven to 40 degrees F.
  • Set the bread slices on a sheet pan and place them in the oven until they are gorgeous and golden brown, about 10 minutes.
  • Remove the bread from the oven and rub the surface with the garlic clove.
  • When ready to serve, place the tomatoes and the collected juices on the top of the prepared bread. 
  • Add a scrunch of pepper before serving.
