CRISPY SNACK ATTACK WITH ROASTED BELL PEPPER HUMMUS

INGREDIENTS
- Natures Miracle Snack Cucumbers, 3
- Natures Miracle Cherry Tomatoes, 6
- Natures Miracle Cherry Tomatoes, yellow, 6
- Natures Miracle Bell Peppers
INGREDIENTS HUMMUS
- 1 cup roasted Natures Miracle Bell Peppers
- 3 cups cooked chickpeas
- 1/2 cup Tahini paste
- Salt and pepper
- 2 tbsp lemon juice
- 1 tsp cumin powder
- Green chilli —1 tsp chopped(optional)
- Onions
METHOD
- Preheat the oven to 200 0 C.
- Season the Natures Miracle BellPeppers with salt, pepper and dash of olive oil.
- Wrap the onions seasoned with salt and pepper in a foil.
- Roast the peppers and onions for 40 minutes.
- Remove from the oven and cool until they are easy to handle.
- Peel the skins off the peppers.
- Remove seeds and stems. Cut into chunks.
- In a blender, smoothly blend cooked chickpeas, garlic, Tahini, lemon juice, Olive Oil, salt, pepper fresh coriander, cumin powder and a little green chilli (optional).
- Serve the red pepper hummus with crunch veggies.
