Fried Peppers

🕒 Prep time: 5 minutes Cooking time: 35 minutes🍽️ Servings: 4 to 6

Ingredients

  • â…“ cup extra- virgin olive oil
  • 8 medium bell peppers, mixed colors, sliced
  • 1 cup pitted olives (1 prefer Gaeta or kalamata)
  • 3 tablespoons capers (rinsed and soaked if salt packed, drained if in brine)
  • Sea salt and freshly ground black pepper
  • Toasted sourdough bread (optional), for serving

Instructions

  • In a medium saute pan, heat the olive oil over high heat until it shimmers.
  • Toss in the bell pepper and when they start to turn golden, reduce the heat to low.
  • Add the olives capers, a pinch of salt and a scrunch of pepper.
  • Reduce the heat to low and cook until very soft , about 30 minutes.
  • Eat it on its own or with toasted sourdough bread for extra.

Tip: Add an anchovy fillet with the bell peppers and watch the heat melt it.This adds an incredible layer of flavour to the dish.

Variation:Fried peppers with burrata: To turn this into crostini to serve as an antipasto, toast 4 or so slices of bread in a title olive oil. Top with fried peppers, 8 ounces burrata (torn) and 5 or 6 fresh basil leaves.
