Fried Peppers

Ingredients
- â…“ cup extra- virgin olive oil
- 8 medium bell peppers, mixed colors, sliced
- 1 cup pitted olives (1 prefer Gaeta or kalamata)
- 3 tablespoons capers (rinsed and soaked if salt packed, drained if in brine)
- Sea salt and freshly ground black pepper
- Toasted sourdough bread (optional), for serving
Instructions
- In a medium saute pan, heat the olive oil over high heat until it shimmers.
- Toss in the bell pepper and when they start to turn golden, reduce the heat to low.
- Add the olives capers, a pinch of salt and a scrunch of pepper.
- Reduce the heat to low and cook until very soft , about 30 minutes.
- Eat it on its own or with toasted sourdough bread for extra.
Tip: Add an anchovy fillet with the bell peppers and watch the heat melt it.This adds an incredible layer of flavour to the dish.
Variation:Fried peppers with burrata: To turn this into crostini to serve as an antipasto, toast 4 or so slices of bread in a title olive oil. Top with fried peppers, 8 ounces burrata (torn) and 5 or 6 fresh basil leaves.
