Tiramisu With Mixed Berry Jam

Ingredients
For Mixed Berry Jam
- ¼ cup strawberries
- ¼ cup blueberries
- 3 tablespoons fresh lemon juice
- ¼ cup sugar
For Tiramisu Con Frutti Di Bosco
- Mixed berry jam
- 4 large eggs, separated ¼ cup sugar
- 1 ½ cups (12 ounces) mascarpone cheese
- 12 ladyfinger cookies
- Fresh berries, for garnish
Instructions
For Mixed Berry Jam
- In a small pot, combine the blackberries, strawberries, blueberries, lemon juice and sugar and simmer over medium heat for about 10 minutes.
- The berries will begin to break down and the mixture will start to thicken.
- Remove from the heat and let it sit to thicken more
For For Tiramisu Con Frutti Di Bosco
- First make the mixed berry jam.
- In a stand mixer fitted with the whisk ( or in a medium bowl with a hand mixer), beat the egg yolks and sugar at medium speed until very pale yellow and about tripled in volume, 3 to 4 minutes.
- Add the mascarpone and continue to whip until it creates a soft, spreadable mixture, about 3 minutes.
- In a clean mixer bowl ( or a large bowl with a hand mixer), whip the egg whites until they reach stiff peaks, about 5 minutes.
- Gently fold the egg whites into the mascarpone mixture until well combined.
- Using six 8- ounce dessert dishes, add 2 ladyfingers to the bottom of each cup.
- Add a thin layer of berry jam on top to cover the cookies.
- Add a thin layer of cream,then finish with more jam on top.
- Cover and set in the fridge for at least 3 hours before serving.
- Garnish with fresh berries and mint and serve.
