Ingredients
For cocktail-

30 ML Strawberry Puree

90 ML Prosecco
-
Fresh mint for garnish
For the strawberry puree-
-
1 cup fresh strawberries
-
1 tablespoon fresh lemon juice
-
2 teaspoon sugar
Instructions
For the cocktail (Prep time: 5 minutes)
- Place the strawberry puree in a champagne flute and top with the prosecco.
- Stir with a bar spoon
- Garnish with the fresh mint leaves.
For Strawberry puree (Prep time: 5 minutes plus 2 hours to chill)-
- In a food processor, combine the strawberries,lemon juice and sugar.
- Process until very smooth.
- Pass through a fine-mesh sieve,pressing on the solids to help the process.
- Discard the solids and chill the puree for at least 2 hours before serving.
Tip: You only need 1 ounce of strawberry puree to make each Rossini. If you are only making 1 or 2 cocktails, freeze the excess puree in icecubes trays. You can thaw the frozen cubes to make more whenever you are in need.
