Crostino Di Pomodori E Burrata

🕒 Prep time: 10 minutes 🥘 Cooking time: 30 minutes 

Ingredients

  • ½ pounds cherry tomatoes, halved
  • 4 tablespoons extra virgin olive oil
  • Sea salt
  • 3 garlic cloves, 2 minced. 1 left whole but peeled
  • 1 loaf italian bread, halved lengthwise and then crosswise
  • 1 pound burrata cheese
  • Handful of fresh basil leaves

Instructions

  • Preheat oven to 350 degree F
  • Place the tomatoes in a small baking dish.Add 2 tablespoons olive oil, a pinch of salt and the minced garlic.
  • Bake until the tomatoes soften and start to burst, 20 to 25 minutes.
  • In a medium skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
  • Add the bread cut side down and pan grill until golden brown and crisp, 3 to 4 minutes per side.
  • Remove from heat and let cool slightly. Use the remaining whole peeled garlic clove to rub the toasted bread with.
  • Using a table knife, divide the burrata into 4 pieces and spread it over the surface of the toasted bread.
  • Top with the cherry tomatoes and finish with fresh basil.
  • Cut each section of bread into 3 pieces and serve.
