Crostino Di Pomodori E Burrata

Ingredients
- ½ pounds cherry tomatoes, halved
- 4 tablespoons extra virgin olive oil
- Sea salt
- 3 garlic cloves, 2 minced. 1 left whole but peeled
- 1 loaf italian bread, halved lengthwise and then crosswise
- 1 pound burrata cheese
- Handful of fresh basil leaves
Instructions
- Preheat oven to 350 degree F
- Place the tomatoes in a small baking dish.Add 2 tablespoons olive oil, a pinch of salt and the minced garlic.
- Bake until the tomatoes soften and start to burst, 20 to 25 minutes.
- In a medium skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
- Add the bread cut side down and pan grill until golden brown and crisp, 3 to 4 minutes per side.
- Remove from heat and let cool slightly. Use the remaining whole peeled garlic clove to rub the toasted bread with.
- Using a table knife, divide the burrata into 4 pieces and spread it over the surface of the toasted bread.
- Top with the cherry tomatoes and finish with fresh basil.
- Cut each section of bread into 3 pieces and serve.
