Ingredients
- 2 Natures Miracle Cherry Tomatoes (Buy Now)
- San Lorenzo Extra Virgin Olive Oil (Buy Now)
- 3 Cups Vegetable Stock
- 1 Potato cubed
- 1 Onion sliced
- 20 cloves of Garlic
- Salt to taste
- Chilli Flakes
- Balsamic Vinegar
- Basil Leaves
Instructions
- Add 2 cups of cherry tomatoes.
- Add 1 potato, cubed.
- Add 1 onion, sliced.
- Add 20 cloves of garlic and wrap it in foil and season with San Lorenzo Extra Virgin Olive Oil.Â
- Season with San Lorenzo Extra Virgin Olive Oil, salt, chilli flakes and balsamic vinegar.
- Roast for 30 minutes at 200C.
- Blend to a smooth puree.
- Transfer to a pot and add 3 cups of vegetable stock.
- Add 1 cup chopped basil.
