Cherry Tomato Soup by karishma Mehta

Ingredients

  • 2 Natures Miracle Cherry Tomatoes (Buy Now)
  • San Lorenzo Extra Virgin Olive Oil (Buy Now)
  • 3 Cups Vegetable Stock
  • 1 Potato cubed
  • 1 Onion sliced
  • 20 cloves of Garlic
  • Salt to taste
  • Chilli Flakes
  • Balsamic Vinegar
  • Basil Leaves

Instructions

  • Add 2 cups of cherry tomatoes.
  • Add 1 potato, cubed.
  • Add 1 onion, sliced.
  • Add 20 cloves of garlic and wrap it in foil and season with San Lorenzo Extra Virgin Olive Oil. 
  • Season with San Lorenzo Extra Virgin Olive Oil, salt, chilli flakes and balsamic vinegar.
  • Roast for 30 minutes at 200C.
  • Blend to a smooth puree.
  • Transfer to a pot and add 3 cups of vegetable stock.
  • Add 1 cup chopped basil.
  • Simmer for 15 minutes
    Dig in!
